I was travelling from Aryth Ocean to Bandar Eban just now, and I lost a point of stamina, from 47 to 46, without any attacks showing up in my defense log, and with my mount having 2 trips left. I'm using Chrome and Windows 7. I have been bouncing between Bandar Eban and Falme, using consumables and engaging in duels. I *saw* the point of stamina vanish, so I know it happened right as I entered Bandar Eban.

From the FAQ: Note: Hordes can cause you to lose stamina even without a battle occurring. Presumably you lose 1 point of stamina whenever you enter or leave an area currently occupied by the Horde? Some more testing is needed

It's true that if you leave an area that has a horde, you'll lose a stamina point even if you have a mount. However, I'm pretty sure there wasn't a horde in Aryth Ocean at the time Jenlyn talked about. Not sure what would have caused it though.

I've had this happen several times to me. I'll be winning every battle, and every 5-10 battles I'll lose a stamina point.

You also lose stamina based on the amount of health you lose in a battle. 1 point per 100 health lost, plus 1 more if you lose the battle itself.
